Something simple but very refreshing to start off with. This is for all of you suffering in 103 degree heat over there. It can be easily adapted for lemonade, limeade, orangeade etc.

For the cherryade, you need:

600ml (1 pint) soda water, chilled
1 heaped bowl of freshly plucked cherries (just under 500g)
50g (2oz) caster sugar
Ice cubes
The juice of 2 limes

How to:

It’s a messy job to stone the cherries first, so I boil them until they’re soft enough to separate from the stones without any trouble.

1) Bring a small amount of water (450ml or 1/4 pint) to the boil with the sugar and the cherries added. Stir until the sugar dissolves, then simmer gently until the cherries are soft.

2) Remove from the heat. Filter the syrup through a metal sieve and into the blender. Press the cherries through with a spoon. Remove the stones from the remainder of the fruit and tip what is left into the blender with the syrup. Add the lime, then blend the mixture until smooth.

3) Transfer to a jug and top up the cherry syrup with the chilled soda water. Serve in tall glasses filled with ice cubes.
